2 heads broccoli, cut into bite-sized pieces
1 medium white onion, chopped
3 cloves garlic, minced
1 tbsp. olive oil or ghee
4 cups bone or other broth
½ tsp. sea salt
Ground pepper to taste
Juice of 1/2 lemon (or more, to desired taste)
Preheat large pot to medium heat.
Add oil or ghee and coat bottom of pot.
Add in onion and sauté until translucent.
Add garlic and sauté for one minute longer.
Add broccoli, broth and salt to the pot and bring to boil.
Reduce heat to medium and cook for about 5 minutes or until broccoli is just tender.
Reserve 1 cup broccoli and onions.
Place remaining ingredients in a blender or food processor and puree.
Return to pot, stir in reserved broccoli and onions.
Cook for an additional 3-4 minutes.
Remove from heat, add lemon juice, salt and pepper.
Vitamix alternative: sauté broccoli, onions and garlic. Place in Vitamix, along with other ingredients, and blend on soup setting or high for about 10 minutes until hot.
