Here’s another easy recipe to replace pasta!
1 lb. spicy or mild Italian sausage
3 medium zucchini or 4 cups spiraled zucchini noodles
1 tbsp avocado oil
1 tbsp pasture butter
1 bunch asparagus
¼ tsp red pepper flakes
1 clove garlic, minced
¾ cup pecorino cheese, shredded (can omit if dairy free)
Sea salt and black pepper to taste
Use your spiralizer (hand held, Kitchen Aid attachment, etc.) to spiralize the zucchini (if did not purchase prepared zucchini noodles).
Heat avocado oil in saucepan over medium to medium-high heat.
Add garlic and sauté for one minute.
Remove sausage from casings or add ground Italian sausage to pan.
Use a spoon break up sausage into small pieces.
Sauté until fully cooked, about 5-7 minutes.
Remove sausage to separate dish and cover to keep warm.
Add butter to pan.
Add asparagus and sauté for 1-2 minutes.
Add zucchini noodles, red pepper flakes, salt and pepper.
Sauté for 2 minutes.
Add sausage back to pan and toss for 1 minute to warm.
Top with pecorino cheese just before removing from heat.
Option to garnish with basil.
