Happy 4th of July!

Here's a yummy salad recipe for your BBQs today.  Enjoy your celebrations and indulge in good food with friends and family. 

Beet Salad
 
Serves 4-6
6-8 small beets, diced
1 cup sliced and blanched green beans
2 tart apples sliced
1 cup roughly chopped walnuts
 ¼ cup feta cheese (optional)
Salad greens
 3 TB extra virgin olive oil
 3 TB cider vinegar

In a large bowl, combine beets, beans, apples, walnuts, oil and vinegar. Toss gently to mix. Chill. Add mixture to a bed of salad greens.
