Strawberry Cashewcake Bites

This is a great alternative to cheesecake!


1 cup almond meal
¼ tsp salt
½ cup Medjool dates, pitted
2 cups raw, organic cashews, soaked in water
½ cup coconut oil
½ cup raw, organic honey
1 tsp vanilla extract
¼ cup strawberry fruit spread (no added sugar)
6 fresh strawberries, sliced

Soak cashews in water for 1-1.5 hours.

Prepare crust:
Mix almond meal, salt and dates in food processed until smooth.
Press into bottoms of muffin tins.
Put into freezer.

Prepare filling:
Wipe food processor and then add cashews, coconut oil, honey and vanilla extract.
Pulse until smooth.
Spread over crust, but don’t fill to top of muffin tins.
Place in freezer for 10 minutes or longer.
Top with fruit spread and 1 slice of strawberry.
Keep frozen until served.
