Lemon Butter Barramundi

This is easy enough for a quick weekday meal, but tasty and pretty enough for dinner with friends and family. I used fresh rosemary since I have a tree for the holidays. You can substitute any fresh herb for the basil. 

4 barramundi filets (or other white fish)
Grapeseed oil
2 tablespoons pasture butter
1 small garlic clove
½ tsp sea salt
3 tbsp lemon juice
4-6 basil leaves

Rinse filets and pat dry with paper towel.
Add Grapeseed oil to pan on medium high heat.
Sauté the filets for 3-5 minutes (skin side up).
Flip filets and cook for additional 1-2 minutes.

Sauce:
Gently sauté the butter and garlic for about 2 minutes.
Add salt, lemon juice and herb of your choice (basil, rosemary, sage, etc.).
Remove from heat and pour over fillets before serving.

Serves 4

I served it alongside a simple salad and steamed cauliflower and Romanesco. It's a hit with the entire family, including my 6 year old son!
