Portobello Veggie Burgers

4 large portobello mushroom caps
1/2 red onion, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
3 tbsp olive oil
1/2 cup goat cheese
4 romaine lettuce leaves, torn into 2 inch pieces
Sea salt and pepper, to taste
Preheat grill on medium heat.
In a mixing bowl, combine the onion, pepper and zucchini with 1 tbsp of olive oil. Add sea salt and pepper and toss well.
Place vegetables in a grill basket.
Grill for 10 minutes, tossing occasionally.
While the vegetables are grilling, coat the insides of the portobello mushrooms with remaining olive oil.
After the vegetables have grilled for 10 minutes, add the portobello caps to the grill with the inside down. Continue to grill for 5 minutes, along with the vegetables, flipping the mushrooms caps halfway through grilling.
Remove grilled veggies and mushroom caps from the grill.
Fill two of the mushroom caps with the grilled veggies and top with romaine lettuce.
Fill the other two mushroom caps with goat cheese.
Place the goat cheese caps on top of the other caps to form a burger.
Additional vegetables can be eaten on the side.
