Instant Pot Cashew Chicken
This was fast and delicious! I like to eat over greens but it would also be great over cauliflower rice or traditional rice.
3 tbsp avocado oil
1/4 cup coconut aminos (soy free) or gluten free tamari
2 tbsp organic ketchup
2 tbsp rice vinegar
3 tbsp fresh squeezed juice from orange
2 cloves garlic, minced
1 lb. boneless, skinless chicken breast, cubed
4 tsp arrowroot powder
4 tsp water
1 cup cashews
2 green onions (optional)
In a small bowl combine half the avocado oil, coconut aminos (or tamari), ketchup, vinegar, juice and garlic.
Stir to combine.
Toss the chicken breast with half of the arrowroot powder.
Select saute on Instant Pot
Add remainder of oil and chicken to Instant Pot.
Sear for 1-2 minutes (will not be cooked through).
Press cancel on Instant Pot.
Add the sauce and scrape bottom of pot.
Make sure valve is set to “sealing”.
Select manual cook for 10 minutes on high pressure.
While chicken is cooking, whisk remaining arrowroot and water in a small bowl.
After 10 minutes, manually release the pressure.
Open the lid, add the arrowroot mixture, cashews and stir.
Option to garnish with sliced green onion.
