Quick Veggie Prep to Make Salads and Healthy Snacking Easier

What's the biggest challenge of making a salad or snacking on veggies?! Chopping them! Here's a quick tip... when you chop, chop extra for the week. I like to chop some in small pieces so I can just put on greens to start a salad and others in snack size pieces.

You know those moments where you are hungry but don't have time, so you grab a handful of chips? If you have veggies chopped and some guacamole or hummus, it's easy to have a snack full of crunch AND nutrients!

If you are into full on meal prepping (I will admit that I am not), roast or grill some meat and then you can use the grilled meat, greens and chopped veg for an easy salad meal, put it all in a tortilla for a second meal and throw it in bone broth for a third meal.
