Chakra Salad

I love the beauty of this salad as well as the asian flavor. The nut butter adds a richness to the flavor. Note that I did not have enough purple cabbage as supplies were limited during the Stay at Home orders but it’s still beautiful!

4 cups purple cabbage, chopped or shredded
2 stalks celery, chopped
5 scallions, chopped
1 yellow pepper, chopped
2 carrots, chopped
2 tbsp  sunflower seeds
2 tbsp unsweetened shredded coconut

Dressing:
1 tbsp organic nut butter
1 tbsp apple cider vinegar
1 tbsp raw honey
sea salt and pepper, to taste
1 tbsp gluten-free tamari or coconut aminos
1 tbsp olive oil
Option to add diced avocado
