Lemony Kale Cauliflower Salad

1/2 cup lemon juice (or juice from 1 lemon)
1/2 tsp garlic powder
1/4 tsp sea salt
3 cups chopped kale leaves
1/2 cup parsley, chopped
1/2 cup green olives, pitted and chopped
1/2 head of cauliflower (finely chopped) or 1 cup cauliflower rice
2 tbsp extra virgin olive oil
1/4 cup pine nuts

In a mixing bowl combine the lemon juice, garlic powder and salt.
Add the kale to the lemon mixture and massage to soften kale leaves.
Mix in parsley and olives.
Add the cauliflower rice and oil and mix well.
Top with pine nuts.
Add additional salt, as needed.

Notes: can add any other veggies, such as tomatoes, carrots, peppers, etc.
