Molasses Protein Cookies
3/4 cup almond flour
3/4 cup gluten free four (I use Bob’s Red Mill)
1/2 cup vanilla protein powder (I used Designs For Health whey protein powder)
3 tbsp coconut sugar
1 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
2 tbsp blackstrap molasses
1 tbsp maple syrup
1 egg (best at room temperature)
Preheat oven to 375 degrees.
Line a baking sheet with parchment paper.
Combine flours, protein powder, coconut sugar, baking powder, cinnamon and nutmeg in a medium bowl and mix together.
In a small bowl combine the blackstrap molasses, maple syrup and egg.
Gradually add the wet ingredients to the dry ingredients and mix until dough forms.
Roll into balls, place on parchment paper and then press down so they form a circle.
Bake for 8-10 minutes or until lightly browned. They will rise and be fluffy.
Notes: can use only almond flour or gluten free flour, but may need more almond flour and less gluten free flour since almond flour is more moist.
