One Pan Balsamic Chicken and Broccoli
8 oz chicken thighs, boneless
3 cups broccoli, chopped into florets
3 tbsp avocado oil
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp garlic powder
1 tbsp Dijon mustard
1/4 cup balsamic vinegar
1 tsp dried oregano
Preheat oven to 400 degrees.
Line a baking sheet with parchment paper.
Place chicken and broccoli on baking sheet.
Drizzle 2 tbsp of avocado oil over chicken and broccoli.
Mix together the garlic powder, salt, pepper and oregano.
Rub the spice mixture on the chicken.
Bake for 15 minutes.
While chicken and broccoli are baking, whisk together the Dijon, balsamic, remaining oil and remaining spice mixture.
After baking for 15 minutes, remove from oven and brush half of the dijon mixture over the chicken and veggies.
Bake for 10 more minutes, then brush the remaining dijon mixture over chicken and veggies.
Bake for 10 more minutes or until chicken is fully cooked.
Remove from oven and enjoy!
