Sheet Pan Balsamic Chicken Thighs and Vegetables
This is an easy but delicious recipe. Feel free to choose whichever vegetables you like.
3 tbsp balsamic vinegar
1/4 cup avocado oil
1 tbsp Dijon mustard
1 tsp dried thyme
1.5 lbs chicken thighs
Seal salt and black pepper (to taste)
4 cups broccoli (chopped into florets)
3 carrots (sliced)
1 yellow onion (chopped into wedges)
Preheat oven to 425 degrees fahrenheit.
Line 2 baking sheets with parchment paper.
Place the chicken onto one baking sheet and season with salt and pepper.
Use half of the balsamic mixture to coat the chicken (top and bottom).
Place the broccoli, carrots and onion on the second baking sheet and use the rest of mixture to coat. Season with salt and pepper.
Place both baking sheets in the oven and bake for 20 minutes.
Mix veggies and place back in the oven with chicken for 8 more minutes (if broccoli is getting to charred, you can remove).
