Sunflower Butter Bars

These are a great alternative to packaged energy or candy bars. They are nut free (except for coconut butter) for those that are sensitive or allergic to nuts. 

1 cup sunflower butter
½ cup coconut butter
3 tbsp honey
1 cup finely shredded unsweetened coconut
2 tbsp raw cacao
3 tbsp coconut oil, melted
½ cup dark chocolate
2 tbsp roasted, salted sunflower seeds

In a medium bowl, blend the sunflower butter, coconut butter, honey, coconut, cacao and coconut oil until well combined.
Press the mixture into a greased 8x8 pan and refrigerate until firm.
Melt the dark chocolate in double boiler or stovetop on very low heat.
Spread the melted chocolate over the bars.
Sprinkle the sunflower seeds over the top before the chocolate hardens.
Cut into 16 bars.
Store in the refrigerator or freezer.
