Grainless Granola

I made this as a holiday treat for friends and family, but I have to warn you that this stuff is addictive! We were all snacking on it as it came out of the oven.

1 cup raw cashew pieces
1 cup raw pumpkin seeds
1 cup sliced or slivered almonds
2 tbsp chia seeds
1 cup unsweetened coconut flakes
2 tsp ground cinnamon
2 tbsp coconut oil
¼ cup sweetener of choice from: maple syrup, raw honey, agave nectar, stevia, coconut sugar

Preheat oven to 300 degrees.
In a large bowl, combine the nuts, seeds, coconut and cinnamon.
Add the oil and sweetener and mix together.
Spread the mixture on a baking sheet.
Bake for approximately 15-20 minutes, stirring once.
Will turn golden when finished.

Makes 16, ¼ cup servings

You can add variety by changing the chia seeds to flax seeds of the nuts to other varieties, such as pistachio, macadamia, walnut, pecan, etc. To add some holiday flair I added some dried blueberries, pomegranates and cranberries.
