Banana Walnut Bread

3 very ripe bananas
4 eggs, room temperature
2 tsp vanilla extract
¼ cup coconut oil, melted and cooled
1 ¾ cups blanched almond flour
½ cup cassava flour
1 tsp baking soda
½ tsp baking powder
1 tsp cinnamon
¼ tsp sea salt
½ cup walnuts, chopped
Optional: dark chocolate chips

Preheat oven to 350 degrees.
Line a bread pan with parchment paper.
In a small bowl, whisk together the almond flour, cassava flour, baking soda, baking powder, cinnamon and sea salt.
In a large bowl, mash the bananas.
Add eggs, vanilla and coconut oil to bananas and whisk together.
Gradually add the dry ingredients to the wet ingredients and stir until combined. Do not over-mix.
Fold in the walnuts and chocolate chips (if adding).
Pour batter into bread pan.
Bake until toothpick comes out clean, approximately 50-60 minutes. Do not under-bake even if looks fully baked.
Cool fully on a wire rack.
