Apple Blueberry Oat Crisp

This is a great treat that is gluten free, but does have some oats. It’s definitely not low carb but has only natural sugars so it’s a treat I endorse (and love)!

1/3 cup+ coconut oil
3 apples (cored and sliced)
1 cup blueberries
1/2 cup maple syrup
1 tsp cinnamon
1/2 cup all purpose gluten-free flour
1 1/2 cup oats
1/4 cup coconut sugar

Preheat oven to 350 degrees.
Use a small amount of coconut oil to grease an 11x7 baking dish.
Add the apples maple syrup and 1/4 cup of GF flour to the baking dish and toss to blend.
Gently add in the blueberries.
In a small bowl, stir together the remaining flour, oats and coconut sugar.
Using your hands, blend the coconut oil to the dry mixture until well combined and crumbly.
Sprinkle the oat mixture evenly over the fruit mixture and press gently.
Bake for 45 - 50 minutes or until golden brown and fruits are soft.
Allow to cool and enjoy!
