One Pan Paprika Tofu and Veggies

1/2 head cauliflower, chopped into florets
2 bunches broccoli, chopped into florets
2 cups green beans, trimmed
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1/2 red onion, chopped into strips
2 garlic cloves, minced
1 tbsp paprika
1 tsp dried thyme
1 tsp sea salt
1/4 tsp black pepper
3 tbsp avocado oil
1 lb extra-firm tofu, chopped into squares

Preheat oven to 450 degrees.
Line a baking sheet with parchment paper.
In a large bowl, add garlic, paprika, thyme, salt, pepper and 2 tbsp avocado oil.
Whisk until well combined.
Add the tofu cubes to the bowl and toss to coat.
Gently add the chopped vegetables and 1 tbsp of the avocado oil to the bowl and stir to coat.
Transfer to baking sheet.
Bake until tofu starts to crisp and vegetables are tender, approximately 20-30 minutes.
