Zucchini Noodles with Salmon

This is one of the most popular recipes in The Reset! Easy way to swap out the pasta for a healthier alternative.

8 oz salmon filet
1 cup basil leaves
1/4 cup extra virgin olive oil
1 garlic clove, minced
Juice from 1/2 lemon
1/8 tsp sea salt
2 cups arugula
2 zucchini, spiralized (can buy 2 cups of “zoodles” pre-made in store)

Place the salmon on a baking sheet and broil on high for 5-7 minutes, until flaky.
In a blender or food processor, add the basil, olive oil, garlic and lemon juice. Blend until smooth.
Remove salmon from oven and chop into bite-sized pieces.
In a pan over medium heat, add the arugula and cook for 1-2 minutes, until wilted. Remove and set aside.
Add the zucchini noodles and cook for 3-4 minutes (don’t over cook).
Place the zoodles, arugula and salmon on a plate.
Drizzle the sauce on top and enjoy!
