One Pan Lemon Salmon with Squash and Brussels Sprouts

I’m kind of obsessed with one pan meals! I always make extra so it’s usually two pans but I love having less things to clean up and this meal is ready in under 30 minutes!

1/2 butternut squash, cubed (option to purchase pre-cubed squash)
1 cup Brussels sprouts, quartered (can also purchase pre-cut)
2 tbsp extra virgin olive oil
1/4 tsp sea salt
Juice from 1/2 lemon
1 clove garlic, minced
1 tbsp parley, chopped
12 oz salmon filet

Preheat the oven to 375 and line a baking sheet with parchment paper.
Add the Brussels sprout and squash to the baking pan and drizzle with 1 tbsp of olive oil. Mix together and top with 1/8 tsp sea salt.
Bake for 10 minutes.
While the vegetables are baking, combine 1 tbsp olive oil, lemon juice, garlic and parsley.
Remove the vegetables from the pan and make room for the salmon.
Add the salmon to the pan and season with 1/8 tsp sea salt. Pour the oil mixture over the salmon.
Bake for an additional 15 minutes or until salmon flakes and vegetables are tender.
