Savory Squash

This is a beautiful and yummy addition to any holiday feast!

1 Delicata squash, peeled and sliced in quarter rounds
1 Butternut squash, peeled and chopped
1 tbsp avocado oil
1/2 cup pecans, chopped
1/4 cup goat cheese, crumbled
1 cup arugula
1/2 cup microgreens
Sea salt and black pepper, to taste

Preheat oven to 400 degrees.
Line a baking sheet with parchment paper.
Add the chopped squash to the baking sheet and toss with avocado oil and add salt and pepper.
Bake for 20 or until squash is getting tender.
Add the pecans and bake for an additional 5 minutes.
Add arugula to platter.
Remove squash from oven and place on top of arugula.
Top the squash with goat cheese and microgreens.
