Paleo Seed Bread

if you love bread but it doesn’t love you, this is a great alternative. This is full of healthy fats to help fight inflammation and avoid a blood sugar rollercoaster. I can tell you this doesn’t last long in our house!

2 1/2 cups almond flour (blanched or unblanched)
1/4 cup coconut flour
1 tsp baking soda
1/2 tsp sea salt
6 pasture raised eggs
1/3 cup + 2 tbsp olive oil
2 tbsp apple cider vinegar
2 tbsp raw honey
1/4 cup flaxseeds
1 tbsp chia seeds
1/3 cup pumpkin seeds (plus extra for topping)
1/3 cup sunflower seeds (plus extra for topping

Preheat oven to 325 degrees (convection bake is best, if available) and line a bread pan with parchment paper.
In a small bowl combine the flours, baking soda and sea salt.
In a separate bowl or blender, combine the eggs, olive oil, apple cider vinegar and honey until well mixed.
Add the dry ingredients into the wet ingredients.
Gently mix in the flaxseeds, pumpkin seeds, sunflower seeds and chia seeds.
Using a spatula move the batter to the bread pan and spread evenly.
Top with additional sunflower and pumpkin seeds.
Bake bread for approximately 40 minutes, but check after 30 minutes. Bread is done when toothpick comes out clean.
Remove bread and place on cooling rack for 30 minutes.
Slice and enjoy!
