Pork or Chicken Cauliflower Fried Rice

1/3 cup tamari soy sauce (gluten free) or coconut aminos (soy free)
2 tbsp lime juice
2 tbsp water
2 cloves garlic, minced
1 tbsp fresh ginger, grated
1/2 yellow onion, chopped
1 lb ground pork or chicken
1/4 tsp crushed red pepper (more if you like it spicy)
1/4 tsp sea salt
6 cups kale
4 cups cauliflower rice
1/2 cup cilantro (optional)

In a small mixing bowl combine the coconut aminos or tamari, lime juice, water, garlic and ginger. Set aside.
Heat a large skillet over medium-high heat.
Add the onions and saute until they start to soften (about 4 minutes).
Add the ground chicken or pork and brown, along with the red pepper, breaking it up into small pieces as it cooks.
Once it's cooked through (about 10 minutes), remove excess drippings from the pan and add salt.
Add previously mixed sauce and simmer for 3 minutes.
Add the cauliflower rice and kale and cook for 1-3 minutes (1 minute for firmer rice and kale, 3 minutes for softer rice and kale).
Option to serve topped with cilantro.
