One Pan Chicken, Broccoli and Cabbage

I love One Pan Meals to make a full meal quickly with just one pan to clean! This meal is colorful and has so much flavor the whole family will enjoy it. This can be paired with rice or cauliflower rice or on its own. If you don’t like cabbage, broccoli or mushrooms, feel free to substitute with your favorite vegetables!  

Ingredients:

1/4 cup soy sauce, gluten-free tamari or soy-free coconut aminos
2 tbsp avocado olive oil
3 cloves garlic, minced
1 1/2 tsp ginger, minced or 3/4 tsp ground ginger
1/8 tsp sea salt
2 cups broccoli, chopped into florets
2 cups purple cabbage, cut into small strips
12 baby bella mushrooms, quartered
10 oz. chicken breast, chopped into strips
2 stalks green onion, chopped (optional for garnish)

 Preheat oven to 400 degrees.
Combine the soy sauce, oil, garlic, ginger and salt in a medium mixing bowl.
Add the broccoli, cabbage and mushrooms to the bowl and toss to combine.
Using a slotted spoon, transfer the vegetables to a baking sheet, leaving the liquid in the bowl.
Add the chicken to the bowl with the leftover liquid and allow the chicken to marinate while the oven preheats. 
Once oven is ready, transfer chicken and liquid to baking sheet.
Place baking sheet in oven and bake for 15 minutes or until chicken is cooked through and vegetables are tender. 
Divide between plates and top with green onion.
