Egg Roll in a Bowl

You’ve probably had egg rolls and wished there are a healthy version. Well here is a healthy version of Egg Roll in a Bowl! It’s ready in less than 20 minutes and all ages love it! I like to use half spicy pork sausage and half mild for some extra kick.


2 tbsp avocado oil
1 yellow onion, diced
5 stalks green onion, diced
4 cloves garlic, minced
1 tbsp ginger (peeled and grated) or 1/4 tsp ground ginger
1 lb ground pork
6 cups coleslaw mix
2 cups bean sprouts (typically found in the international section in grocery store)
¼ cup coconut aminos, gluten free tamari or soy sauce

Heat the avocado oil in a pan over medium high heat.
Add the yellow onion, green onion, garlic and ginger, cooking for 4-5 minutes or until soft.
Add the pork, cooking until fully done, approximately 7-10 minutes. Break up pork as it cooks.
Stir in the coleslaw mix, bean sprouts and coconut aminos.
Cook for another 5 minutes or until veggies have softened.
Serve in bowls and enjoy!
