Paleo Pumpkin Cookies

These cookies are sooo good and a healthy way to celebrate the fall season!

2 cups almond flour
1 tsp baking powder (aluminum free)
1/4 tsp sea salt
1/2 tsp pumpkin pie spice
3 tbsp coconut oil, melted
3 tbsp pumpkin puree
1/4 cup maple syrup
2 tsp vanilla extract
2 tbsp cinnamon
2 tbsp coconut sugar

Preheat the oven to 350 degrees.
Line a baking sheet with parchment paper.
In a large bowl, mix together the almond flour, baking powder, sea salt, pumpkin pie spice.
In a small bowl, whisk together the coconut oil, pumpkin puree, maple syrup and vanilla extract.
Blend in the wet ingredients to the dry ingredients. Mix until sticky.
Place the dough in the refrigerator for 10 minutes to help firm up the dough.
On a small plate, mix the cinnamon and coconut sugar.
Form 1 tbsp balls and roll in the cinnamon mixture. Place on the baking sheet.
Using a glass or a jar, press the ball to about 1/2 inch thick.
Bake for approximately 10-12 minutes. Ten minutes will producer softer cookies and 12 minutes will produce harder cookies. Note that cookies will harden a bit after removing from the oven.

Makes 12-15 cookies
